Every order is a 48-hour build, from feed to bake.
Day 1 - We feed our 100 year old starter and let it triple. Once it's bubbly and ripe, we mix the dough by hand and let it saltalyze.
Day 1 evening - Slow bulk ferment with stretch & folds. This is where the flavor builds.
Overnight - Cold retard in the fridge for 18 to 24 hours. This long, slow rest is what makes our crumb open, the crust crackly, and the bread easier to digest.
Day 2 - Shape, final proof, score, and bake in stainless steel Dutch ovens for that crispy crust.
Day 2 evening - Cool completely, slice if you asked us to, and set out for your 24/7 pickup to-go.
