High humidity in Thailand can make sourdough starter unpredictable; consider a slightly drier starter mix. When proofing, use a cooler environment, perhaps a slightly chilled oven (turned off) or a covered bowl in the refrigerator, to control fermentation and prevent over-proofing in the heat.
