    Chicago’s low altitude means sourdough formulas do not need high-altitude changes, but the seasons matter a lot. In humid July and August, hold back about 20 to 30 grams of water per 500 grams of flour until you see how the dough feels, because flour can already be carrying extra moisture. In winter, when radiators and forced-air heat dry out apartments, a 75 percent hydration dough may feel tighter, so add water gradually during mixing or use a covered bulk container. Fermentation is often slower in cold kitchens, so expect bulk rise to take longer unless the dough is kept around 75°F.
