For a basic loaf, start near 70% hydration, and on muggy days hold back 25 grams of water per 500 grams of flour until the dough has rested and you can feel whether it needs it. In winter or in a very dry air-conditioned room, the same dough may need 10 to 15 grams more water and a warmer spot during cold fronts.
